Grab your Family and share round this week’s Nacho and Guacamole recipe. Perfect for those nights where you need something easy and tasty to share between you, this recipe can be altered (for dietary requirements) and added to easily and is a perfect accompaniment with Quesadillas or Fajitas.

For the Nachos –
1 Bag of Plain/Salted Tortilla Chips,
100g Cheddar Cheese,
50g Red Leicester,

For the Guacamole –
2 Ripe Avocados,
1 Red Chili,
½ Red Onion,
Juice of ½ Lime,
6 Small Tomatoes,
2 Tbsp Olive Oil,
Salt & Pepper to Taste,
Feel free to add whatever else you want to the Nachos, I added a portion of Homemade Chili Con Carne but you could add Bacon, Pulled Chicken, Jalapenos etc (but whatever you add, it must be pre-prepared and cooked if required).

1. Pre-heat your oven to 180°C and then prepare the rest of your ingredient: Grate your Cheese, deseed your Chili and Tomatoes then dice, dice your Onion and scoop out the Avocado flesh.

2. Add all your Guacamole ingredients to a large bowl and then mash and mix with a fork to combine, adding Salt and Pepper to taste. Set aside and cover with clingfilm, making sure the plastic touches the Guacamole to prevent the Avocado from browning.

Tip: Add in some chopped Fresh Parsley for an extra hit of flavour.

3. In a large flat dish, spread your Tortilla Chips evenly and then evenly spread your grated Cheese over the top. Place in your Pre-heated oven for 20 minutes.

Tip: If you are adding any other toppings, add them here either above or below the Cheese layer.

4. Once the Cheese is melted and starting to brown, remove and then serve with your Guacamole on the side.

Tip: Also add some Sour Cream and Salsa for some extra flavour.
